Recipe: Mango Lime Salsa

I bought this frozen meal called Tilapia Fillet with Mango Lime Salsa from Costco and it was really good.  Every time we’d go to Costco, I’d always check on the frozen aisle to see if they have it.  It has been months and each time I check, there was nothing.  Because of this, me and my sister attempted to replicate its taste and flavor.  Last Thursday, my sister made it and it turned out good.  The only thing is, Tilapia  fillets are small and I don’t get enough of it.  Today, I went to the grocery store and bought some fresh Salmon (decided to have this instead of Tilapia as it has more meat in it) along with my ingredients for the Mango Lime Salsa.

Try this simple and easy recipe and serve it on your next meal!

Ingredients:

  • 1 ripe mango
  • 1/4 large onion
  • a bunch of fresh cilantro
  • 2 Roma tomatoes
  • 1 small lime or lemon
  • 1 tsp apple cider vinegar (optional)
  • 3/4 tsp salt

Instructions:

  1. Cut your mango and dice it into couple small pieces. To cut your mango, slice parallel to the seed on the wide flatter side of the fruit. Make several vertical slices followed by several horizontal slices into the flesh. Push the skin up into the flesh, thereby fanning out the fruit. You can then slice off your diced mango directly into your bowl.
  2. Finely dice your tomatoes and onions.  Add these to the bowl with the mango.
  3. Juice your lime/lemon and add the juice, cilantro, apple cider vinegar (optional) and salt to the bowl of mango salsa mixture.
  4. Mix your mango lime salsa mixture well. Cover the bowl and let stand at room temperature for at least 30 minutes.
  5. When the mango lime salsa has juiced up, mix again thoroughly and serve with your favorite meal.

    it’s so easy and i’m sure you’ll come up with a better tasting salsa since our mangoes there in pinas are oohhh so delish!
